Leftover Ham Muffin Cups
Crispy crescent-roll cups stuffed with diced country ham and Swiss — the easiest way to make leftover Nelson Brand ham feel like a brand-new dinner.
We started making these the year my freezer was overrun with leftover ham trim from the holiday rush. They're the kind of dinner that takes ten minutes of hands-on time and disappears off the plate before you sit down. Country ham gives them a salty backbone you can't get from deli meat, and the Swiss melts into something that tastes like it took a lot longer than it did.
Serve them with a quick green salad or a bowl of soup and call it dinner. Pack the leftovers in lunchboxes — they reheat beautifully in a toaster oven. If you want to dress them up for a brunch, swap the crescent rolls for puff pastry and add a bit of grainy mustard to the filling.
The base recipe is forgiving. Use up whatever cheese you have on hand, swap the dill for chives, fold in a handful of frozen peas. The one rule: start with good ham. If you need to restock, the country ham from Nelson Brand ships direct from our smokehouse in Fairfield, NE.
Ingredients
- 2 cupsdiced Nelson Brand country ham (or leftover turkey)
- 1 to 1 1/2 cupsSwiss cheese, shredded
- 1/2 cupmayonnaise
- Pinchdill
- Pinchsalt (a pinch of thyme is nice too)
- 1 containerrefrigerated crescent rolls
Instructions
Preheat oven to 350 degrees and spray a 12-cup muffin pan with non-stick spray.
In a bowl, combine diced ham, shredded Swiss, mayonnaise, dill, and salt. Stir until evenly coated. Add a touch more mayo if you want a creamier filling.
Lay an unrolled crescent triangle into each muffin cup with the wide side on the bottom; let the point hang over the rim.
Spoon the ham mixture into each cup until full, then fold the small point of the crescent over the top to enclose.
Bake 8 to 10 minutes, until the tops are golden brown. Let cool 2 minutes before turning out — the cheese needs a moment to set.
