Crockpot Ham and Potatoes

Layered crockpot ham and scalloped potatoes with Swiss and a creamy mushroom sauce. The Sunday-supper casserole that takes ten minutes to assemble.

This is what we used to call "ladies' aid casserole" growing up — the kind of dish that quietly cooks itself while everyone's at church. It's the easy, generous sister to scalloped potatoes: same comfort, none of the babysitting, and the country ham gives it a depth no boxed au-gratin mix can match.

The trick is layering. The broth at the bottom keeps the potatoes from sticking, and the alternating layers of ham, onion, and cheese mean every bite has all four flavors. Don't lift the lid before the five-hour mark — every peek loses 20 minutes of cook time on a slow cooker.

If you have leftover Easter or Christmas ham, this is the dish to use it in. Dice the meat smaller for crockpot use than you would for a sandwich — smaller pieces release more flavor into the sauce. And use a not-too-fancy Swiss; the budget kind from the grocery deli melts more evenly than the imported wedges.

Ingredients

  • 1/2 cupvegetable broth (or water)
  • 2 cupsNelson Brand country ham, diced
  • 4 mediumrusset potatoes, peeled and sliced thin
  • 1 mediumyellow onion, sliced
  • 1 cupSwiss cheese, shredded
  • 1 can (10.75 oz)cream of potato or cream of mushroom soup
  • 1/2 cupmilk
  • Pinchsalt and black pepper, plus more to taste

Instructions

  1. Pour the vegetable broth into the bottom of the slow cooker.

  2. Layer in this order: half the sliced potatoes, half the diced ham, half the sliced onion, half the shredded Swiss. Repeat with the remaining ingredients.

  3. Sprinkle a pinch of salt and pepper over the top.

  4. In a small bowl, whisk the condensed soup with the milk until smooth. Pour the sauce evenly over everything in the crockpot.

  5. Cover and cook on low for 6 to 7 hours, until the potatoes are fork-tender. Resist the urge to stir until the end.

  6. Just before serving, gently fold everything together so the sauce coats every layer. Taste and adjust salt and pepper at the table.
